麵筋是植物性蛋白質，由麥醇溶蛋白和麥穀蛋白組成 。將麵粉加入適量水、少許食鹽，攪勻上勁，形成麵團，稍後用清水反複搓洗，把麵團中的澱粉和其它雜質全部洗掉，剩下的即是麵筋。油麵筋用手團成球形，投入熱油鍋內(nei) 炸至金黃色撈出即成。將洗好的麵筋投入沸水鍋內(nei) 煮80分鍾至熟，即是“水麵筋”。
